Q:It seems that pull-out spray handle is made of plastic. Is that correct? Seems inconsistent with high quality faucet.

It is plastic, because it would be too hot to pull out if it was all metal.

Q:We do not have a lot of room for faucet in between sink and backsplash. I assume lever is tilted down to turn on water and rotates back for hot and forward for cold. How far back (from its closed position) does the mixer lever handle extend when pushed all the way back?

The lever on this only swings forward. The lever does not swing back behind the faucet.
